By the numbers it looks like a d-rest would be fine now. I usually wait 14 days but I don't really check gravity along the way like I should so it sounds like you're ready.

And is there any problem with serving this through my normal taps? Will I need to replace everything to get the lacto out when I'm done? Brent's mention of the leaking bucket is probably on target. After I read that I remembered the same thing happening to me, the CO2 was escaping from all around the lid and not going out the airlock. That was on one of my conicals when I didn't have the lid screw down tight enough.

Yep. Sometimes a wheat ale at that temp could finish that fast, but not likely. In my experience wheat beers go through an explosive (literally) fermentation that lasts about 72~96 hours before it starts to settle down.

That's very good information and makes a lot of sense. I know there are some bulbs that when grown in temperate climates like SoCal need to be wintered in the refrigerator or freezer for them to really grow well in the spring.

I'll be heading out in a couple hours here to go down to San Diego, they have a huge Mardi Gras party in the Gas Lamp District. Nothing like a huge party of booze, beads and boobs!
