Thanks Brent, good observations - I think I'll start something from scratch then..

So - I have a Sapporo clone that I just started lagering yesterday - yeah, we made it with cereal-mashing some rice - worth entering (in category 34?), or, don't go there?

I just signed up to do a Weissbier also.

Can't make it, there's a Cage concert at Five Points...figured the meeting would be a Tues or a Thurs, but understand you get space when you can get space. Next month!

So...speaking of temps and WLP029, I'm doing an Oktoberfest with it on Sunday. Pitch at 65F, ferment for 7 days, then ramp down tp 60F for 14 days, then a D-rest, then keg. No clue how to adapt that for an IPA, but I'll be happy to taste some!

Thanks - I might give it a try on a Saison - but will probably control the temp to something in the 70s. If it works, it could be a useful thing for folks without temp control.

I use BeerSmith. I have every recipe I've brewed back to the beginning of 2010. I make a copy of each recipe even if I didn't change anything in the recipe, my gravities may end up slightly different or even added tasting notes may be different.
