The longer you age something on oak, the more oak character you get. It will not "cruve" back around and lose character (unless we are talking 10 years) If you want more oak... through some cubes into your cornie.

I would have to agree with you that this one is the best of the "flight" that I have had. When OotP did the Epic release on 12.12.12, I stopped by to have a flight of the 06-12. Each had it's own interesting characteristics, but, as you have stated this one was the least... "experimen...

I've never had a wait that long, but it has been about a year since I had been down there for the Bistro. I will be down there to drop off my keg for the March Madness homebrew comp, I will have to take my growlers with me.

Working at the Breuery would be a healthy step into the industry. Another way to go about it... apply to every brewery that you can... and stay on them. I used to be somewhat close... in Westminster, though just recently moved out to the IE... I'm now 30.9 miles on the other side of Out of the Park... which puts me about 55 miles from John's place... ugh... I do still work in Fountain Valley, so... I may work something out with y'all if there's are ...

One of the wish list items/projects for me in the new place is installing an RO system, either in the garage, or under the kitchen sink. Should cover all of the concerns. If I find a good deal, and have the coin, I may have it installed for the whole house. Will certainly save the scale build up... ...
