Tracking recipes? What's that.... I am the worst. I generally print out a recipe using Beersmith for the first time I'm brewing it. If I rebrew that same sheet gets more notes. I have been reading some positive results from people using it with mead. Like Brad said you want to use it where you want a clean fermentation. I expect it will be a win when it's hot and you don't have temperature control.

One DIY trick I saw was running the apples through an all stainless steel sink garbage disposer before pressing. I think you can rent a press meant for pressing grapes.

My water source is reverse osmosis. RO water is notorious for picking up off flavors and being a solvent. You might have a look at how you collect or store it.
