And now, looking back on kegging day, I remember one of the kegs had a real funky smell when I took the lid off. I re-rinsed it with hose water (and I might have givin it a quick shake with some oxyclean), then sanitized with SaniClean as usual. The 2nd keg did not smell funky, so I just sanitized ...

I reread Appendix A in Brewing Classic Styles ...they dont discuss multi step starters ... is that process mentioned in the Yeast Book?

I got that to work .. I guess you just live with multiple yeast entries in the recipe.

I'm playing around with Beersmith 2 and I'm trying to figure out how one would model a multi-step starter where a single vial is stepped up to 5L over several days. Any ideas?

+ 1 to what Chris said ... you may be able to salvage some beer ... but get 'em cold at least to slow down the fermentation or you'll likely have some bottle bombs (and a mess to clean up ... as me how I know! :oops: ) Did you taste any of it after the foam settled? If it tastes OK, then try to salv...

BTW Beersmith can be had for $20 ... Good use of funds. Search forums ... there was a recent thread that I started ... someone posted a link for $20 Beersmith.

That spider is the one I have. I made new inserts into the legs and used flat stock to go over the pot rim so that the lid will sit on there properly. I'll post some pics (once I get 'em shot)!
