Some places keep them chilled the whole time, others don't. Just ask before submitting.

Refrigerated wort is susciptable to bacterial infection. I have brewed and ppitched yeast the next day and the beer came out fine, but you are taking your chances...

Keg the beer, carb it same day, and serve. Take it to a party or host one and get the best and most out of that batch.

Have you thought about kegging? $189 gets you a full kegging setup. Just force carb the beer and it will be ready to serve.
