I don't do anything special other than fermenting at kolsch temps like you noted. I think that yeast works great for IPA!

When fermenting under pressure, how do you handle dry hopping and racking? For dry hopping, I try to do it before fermentation is complete so the yeast will scrub any O2 that gets introduced. I did have to promise this!

I suspect the o-rings/compression on the racking cane would give way before the keg exploded, but both could be catastrophic if you were in the wrong place.

I'm using a Sanke keg with the Brewer's Hardware Sanke kit, but got it customized to have a threaded connection for the blowoff tube and a TC connector on the racking cane so I can attach a ball valve. I bought a spunding valve from Windsor and took it apart to connect to the threaded blowoff to man...

I almost said American Brown Ale looking at the recipe, but 2# of C-40 had me leaning towards Amber. Amber is also tough because it's such a broad category it leaves you more at the preference of the judges.

Brew what you like. Competitions are their own thing.

The Centennial (Cryo) is actually Centennial Hop Hash, but the software doesn't have that option. Cryo would be a good substitute but I'm not sure how much to use.

I'm fermenting in a sanke keg with the Brewers Hardware fermentation kit. The iSpindel is too large to fit through the opening.

I'm not entirely sure what you'd classify my process as... I push the beer from the fermenter to the kegs using CO2, but it's not really a "closed" transfer as I don't really purge the kegs of O2 before transferring. I use a long 3/8" beverage tube so that the fill goes to the bottom...
