+/-1deg is just fine for all but the most picky recipes when it comes to sous vide. Its a fun thing to do, especially for 100% perfect eggs for breakfast. I built a ghetto one a while ago with some pretty simple stuff, but I never thought of brewing equipment, that would be a good setup.

Awesome Luke, thanks a ton. I will take new cubes and soak em in the bourbon and then put them in and forget about this brew for a while.

So I made my barleywine back in Nov. and on the same day put 2oz oak cubes in bourbon with 4 vanilla beans. I let the BW sit and ferment and finish out and let the oak cubes soak in the bourbon for a month. Then I took the oak cubes out and put em in the brew and just let that sit.

Condensation will build up no matter how good the seal, to get rid of it, i use an EvaDry E500, found http://www.amazon.com/Eva-dry-E-500-Renewable-Wireless-Dehumidifer/dp/B000H0XFD2

I have no empirical data, but my normal water is pretty white, and according to my water report has a fair amount of both Chlorine/Chloramine. I only used unfiltered water for one brew and it was my first. The beer came out really astringent, not sure whether that was the chemicals or my process ...

Brahn, I think we discussed why I can't use my sink. I'm brewing outside and so after my boil I have to carry the hot pot inside to the sink. This has resulted in some nasty burns that I would rather not experience again.
Anyway, I'll look in to these Sump Pumps as it looks like that might do the ...
