Oskaarz Spicy Cyser (Six gallon yield)


Ingredients:
4.5 Gallons Freshly Squeezed Cider (San Luis Obispo, CA)
1.5 Gallons Tupelo Honey
6 Organic Madagascar Vanilla Beans (split and scraped)
1 Handful Mace Blades (coarsely crushed)
6 Quills Ceylon Cinnamon (broken and coarsely crushed)
5 Nutmegs (chopped coarsely and then crushed)
25 Allspice Berries (coarsely crushed)
1 Organic Minneola Tangelo, medium size, zested
1 Organic Pomelo, zested
1 Sweet Paprika, dried, coarsely chopped
1 Organic Ginger, thumb sized, sliced paper thin
10 Pink Pepper Corns, coarsely crushed
3 Bay Leaves, broken up
1 Adriatic Rosemary sprig, small, bruised
3 Adriatic Lavander spears, small, bruised

Must balanced to 32 degrees brix/1.386 SG

10 gm K1-V1116 rehydrated in GO-Ferm (you do the math) pitched and whipped the cr@p outta the must once inoculated.

Will add 6 gm of a 7:3 Mixture of Fermaid-K:DAP at end of lag phase and 6 gm straight Fermaid-K at the 1/3 sugar break.

Open Fermentation until . . . . well, I'll play it by ear
