Sanity check on a Pumpkin Ale

Post by indianajns »

Yes, I know. Not another pumpkin Ale. My family and friends are asking for it. Was wondering if ya'll could provide any feedback on this recipe? I've made it once long ago back when I was making 5 gallon batches. I roasted the pumpkins and scooped the flesh into the mash. No way I'm doing that again. I've read everywhere from 1/3 of a lb to 1 lb per 5 gallons for canned pumpkin?

Amber Ale base recipe
12 gallon batch

2 lbs Rice Hulls (0.0 SRM) Adjunct 1 3.9 %
22 lbs Pale Malt (2 Row) US (2.0 SRM) Grain 2 86.3 %
1 lbs 8.0 oz Briess Special Rorast Malt (40.0 SRM) Grain 3 5.9 %
1 lbs White Wheat Malt (2.4 SRM) Grain 4 3.9 %

Mash (with canned pumpkin) 152.0 F 60 min

2.80 oz Mt. Hood [5.50 %] - Boil 60.0 min Hop 5 24.9 IBUs
add spices with 5 mins left in boil. Use a bag or throw them straight in?
0.60 tsp Ginger Root (Boil 5.0 mins)
3.20 tsp Cinnamon Stick (Boil 5.0 mins)
0.3 tsp clove
0.3 tsp allspice
1.20 oz Mt. Hood [5.50 %] - Boil 2.0 min Hop 8 0.9 IBUs

001 Yeast
1.053 SG

How do you get BeerSmith to accommodate for the canned pumpkin?

Thanks Guys,
~Greg

Thanks. Found it in BeerSmith and added. Any thoughts on how Pumpkin could impact pH?

You also might want to check Gordon Strong recipe in the October issue of Brew Your own.
He calls for 9 lbs of canned pumpkin puree.

I’ve brewed this pumpkin ale twice now. The first time it was great. The second batch picked up a lacto type flavor. I need to make it again – SOON!

For 5 ga
8 oz Rice Hulls (mash flowed perfectly)
2 cans (the 1 lb 13 oz size) Canned pumpkin Note: It must be 100% pumpkin, no spice
9 lb 8 oz 6 row
10 oz Melanoiden Malt
8 oz Caramel 60L
8 oz Victory Malt

That’s the mash. The Pumpkin will mess with your mash temp, so adjust accordingly

In the boil:
1 lb Maple Syrup @ 60 min
14.65 g Magnum @ 60 min
1.5 teaspoon of McCormicks Pumpkin spice @ 0 min

For the fermentor:
1 lb honey
WLP 008

I should have gotten more than 1.067 for my SG, but I have yet to hit my numbers. It finished at 1.016. The trick is to not overdo the spices. This amount is just subtle enough to be enjoyable.
