corn beer

trying to find out how to introduce cracked corn when im steeping the malt or do i cook it sepratley and then add it? any advice

Yeah, I make a corn beer. I make both a cream ale and a classic American Pilsner both using corn. I used the large "maize" available at most Mexican food stores. It's large kernal (the size of a thumb nail) corn. It has to be cracked, crushed and then cooked first, about 45 minutes, then mashed.

It cannot be steeped. I do not know of any corn (other than corn syrup) that can be steeped or added without a mash.

You can also use flaked maize, which also needs to be mashed. You won't get as much corn character as you would using Backyard Brewer's cereal mash, but it is much easier.
